Breakfast quesadillas are a delicious way to enjoy your favorite breakfast flavors all in one bite. Cheesy, melty, and savory with a hint of spice this Copycat Taco Bell Quesadilla is breakfast as good as your favorite takeout made in the comfort of your own home.

This copycat Taco Bell quesadilla is a way to get the same takeout flavors at a fraction of the price at home.
What Ingredients Are In The Taco Bell Breakfast Quesadilla?
Technically, Taco Bell Breakfast Quesadillas only come with four ingredients. This is what helps them keep them relatively affordable to serve and still make a profit. They are flour tortillas filled with scrambled eggs, bacon, and three cheese blend.
I don’t know about you, but if I’m getting up early enough to make breakfast, I’m going to make it worth my time. So, I decided to beef mine up a little bit.
Feel free to add or omit any ingredients you want to customize your breakfast quesadilla, but here’s what you’ll need to make my favorite version:
Flour tortillas- I prefer to use fajita-sized shells for this, but any size tortilla you want to use to satisfy your appetite.
Eggs- Scramble them up or fry one over easy for a burst of runny yolk to sop up with your tortilla.
Bacon- You can use any breakfast meat you want for this dish. I try to keep precooked bacon in my fridge for a quick meal, but sausage or diced ham are both delicious as well.
Hashbrowns- These are what really make this quesadilla filling. The added carbs give you the quick energy and lasting full feeling to make this a great brunch option as well.
Cheese- Cheese works as the “glue” that hold the quesadilla together. Don’t be shy when adding it in, it will keep all of the filling from falling out of the tortilla to make this a solid choice for breakfast on the go.
Creamy Chipotle Sauce- This is an ingredient you can easily leave out if you’re not a fan of spice or don’t want to make a trip to the grocery store, but it’s what takes these quesadillas to the next level. This store-bought Taco Bell Creamy Chipotle sauce gives it a slight kick and a little creaminess.
Vegetable Oil- Just a little bit added to your skillet helps crisp up the tortilla to give it that little bit of added crunch.
How To Make Breakfast Quesadillas
Prepare your bacon. Warm your skillet over medium heat and cook your bacon to your desired doneness. I prefer mine extra crispy. Remove it from the skillet but leave the bacon renderings.
Cook the hashbrowns. Add the hashbrowns to the bacon grease and allow them to cook until tender and cooked inside and crispy on the outside. Remove from the skillet and set aside.
Scramble some eggs. While the hashbrowns are cooking, scramble your eggs in a bowl. Use the same skillet you cooked your bacon and hashbrowns in to cook your eggs. When they are cooked, remove them from the skillet and set aside with your cooked bacon and hashbrowns.
Assemble the breakfast quesadilla. On a plate, layer your quesadilla in this order:
Tortilla
Chipotle Sauce
Cheese
Egg
Bacon
Hashbrowns
More Cheese

Crisp and cook. Add a small amount of vegetable oil to your pan (you can also use nonstick spray). Then add your quesadilla to the skillet. Allow to cook on low-medium heat for 2-3 minutes or until the bottom tortilla is golden brown and the cheese begins to melt. Use a spatula to carefully and quickly flip the quesadilla. Allow the other side to crisp up for 2-3 additional minutes and remove from the skillet.
Serve and enjoy! Cut into 4-6 pieces and serve with your favorite sides and sauces. Enjoy a delicious hearty breakfast your whole family will love!
Variations
Use a different protein. I like the convenience of bacon for this recipe but feel free to use your favorite protein in place of it. In fact, you can make these a vegetarian breakfast option by simply leaving the meat out or using a meat substitute.
Add veggies. Spinach, mushrooms, onions, or even cherry tomatoes make a great addition to these breakfast quesadillas. Cook them to their desired doneness before adding them to your quesadilla so they don’t release too much moisture while cooking and make your tortilla soggy.
Play with size. Depending on how many people you are cooking for, it may be easier to make a couple of larger quesadillas instead of a lot of little ones. Just keep in mind the larger the tortilla, the harder it will be to flip.
What Is The Hack For Flipping A Quesadilla?
Flipping a quesadilla can be a little tricky when they’re loaded with so many yummy ingredients. If you’re having trouble flipping your breakfast quesadilla, you can use the plate trick.
Carefully place a plate over the top of your skillet and secure the plate in place with your hand. Pick up the skillet and flip the quesadilla onto the plate. Place the skillet back on the stove and slide the uncooked side of the quesadilla back into the skillet. Allow it to continue cooking until both sides are crispy.
How Long Do They Last?
This on-the-go breakfast is best served straight out of the pan so you can get that crispy crunch of the tortilla. The longer they sit, the soggier the tortillas become. If you have leftovers, you can store them in an airtight container for 3-4 days to reheat for later.
Can You Freeze Them?
Yes! These Breakfast Quesadillas are a great option for a make-ahead breakfast or meal prep! If you want to double or triple the recipe and freeze them for later, here’s how to do it:
Prepare your quesadillas and allow them to cool to room temperature.
Lay them flat in between pieces of parchment paper or wax paper.
Place the layered breakfast quesadillas into a gallon-sized freezer bag labeled with the contents and the date they were prepared.
Freeze them flat for up to 3 months.
To reheat them, place them in the refrigerator overnight to defrost. Toss them in a skillet and cook on low until warmed through and crispy on the outside.
