Cheesy BBQ Chicken Rollups are a quick and easy 20-minute recipe. They’re hearty, melty, kid-friendly, and can be customized with your family’s favorite flavors.
If you’re like me, you find yourself buying the same staple ingredients with every trip to the grocery store. I try to make a list as much as possible, but sometimes I find myself wandering the aisles and tossing things I know I’ll use in the shopping cart so I’ll always have SOMETHING to cook in a pinch.
Well, pizza dough is one of those ingredients in our house.
There’s only so much pizza a family can eat when you need a quick and easy meal, though. So, when I saw that tube of pizza dough staring back at me I knew I needed to mix up the flavors a little bit. That’s how this BBQ Chicken Rollup recipe was born.
Rotisserie Chicken– Now that you can buy pre-shredded rotisserie chicken at nearly every grocery store, I like to keep a package in my refrigerator for quick weeknight meals.
Refrigerated Pizza Dough– I prefer the traditional style pizza dough over the thin pizza crusts because they are easier to roll up after they are filled without damage.
Mozzarella Cheese– Makes these BBQ Chicken Rollups super melty and gives that traditional pizza cheese pull you know and love.
BBQ Sauce– this works as the glue to hold the chicken and cheese in place.
Shredded Colby Jack Cheese– You can never go wrong with more cheese, and adding this variety adds to the depth of flavor.
Olive Oil– To brush on top of the cut chicken rollups to help them turn golden brown.
Italian Seasoning– I used za’atar in the ingredient image because it’s my current obsession, but it can be hard to come by. Any Italian seasoning blend will also work.
If you have 20 minutes and a handful of ingredients, you can have a quick snack, meal, or appetizer that is guaranteed not to disappoint.
Follow these simple directions for a chicken dish that will turn out perfect every time!
Step 1: Roll out the pizza dough on a nonstick surface. I use a baking sheet sprayed with nonstick spray to make for easier cleanup.
Step 2: Spread BBQ sauce on the pizza dough. Use a basting brush to evenly spread the sauce. As tempting as it may be, don’t overload the dough with sauce. The more liquid it has on top of it, the harder it is to maneuver the rollups into your skillet or baking dish.
Step 3: Add the chicken. Place the rotisserie chicken on the sauced pizza dough, using care to keep it spread as evenly as possible.
Step 4: Cheese it up. Sprinkle both kinds of cheese on top of the pizza dough. Don’t be shy with this step. The cheese works as glue to help the chicken rollups stay together once they’re baked and make them perfectly dippable.
Step 5: Roll it up. Once you have added all of the toppings, carefully work from the narrow end and start rolling. Slow and steady is the key to success here. Keep the spiral tight, but don’t press so hard you rip the dough.
Step 6: Slice it into pieces. Move the rolled-up pizza dough log onto a cutting board and slice it into eight 1″ portions.
Step 7: Add the BBQ chicken rollup slices to an oven-safe skillet or baking dish. Lightly brush the tops with olive oil.
Step 8: Add Italian seasoning and more cheese. Pile on more mozzarella to make them bubbly and brown.
Step 9: Bake and serve! Carefully remove the bubbly BBQ Chicken Rollups from the oven and enjoy.
Add veggies. My husband requested that next time I make these to add red onion. I think they’d be fantastic with some spinach (but I love it on next to everything).
Switch up the sauces. Not a fan of BBQ sauce? No problem. Grab a jar of pizza sauce, alfredo sauce, or pesto for a delicious take on these chicken rollups.
Double it up. If you’re cooking for a large family or appetizers for a crowd, grab a twin pack of refrigerated pizza dough and make twice as many.
Make it vegetarian. Feel like skipping the meat? Bulk up your rollups with lots of veggies (think squash, zucchini, broccoli, onions, cauliflower), or add paneer or tofu. Just make sure to dab any excess moisture off of the veggies before adding to the pizza crust so it doesn’t come out soggy.
This recipe definitely isn’t a well-rounded meal by itself, so you’ll want to make a side or two to go along with it. Here are some suggestions of things that might pair well:

If you know in advance you’re going to have a super busy day and need to skip the prep time for this recipe, you can prep these the night before. Follow the instructions above and stop once you roll the pizza dough into a log. Wrap the uncooked and unsliced pizza dough in plastic wrap and store it in the refrigerator.
Once you’re ready to bake, slice the rolled pizza dough into pieces, brush with olive oil and add cheese and Italian seasoning. Bake according to the instructions and serve.
These rollups will last up to 3 days in the refrigerator without losing any of their amazing flavors. To reheat, pop them back in the oven at 350F for 3-4 minutes or until warmed through. If you have an air fryer, you can also reheat them at 325F for 2-3 minutes for bubbly cheese and crispy dough.
