What Is The Sauce Made Of In Chicken Pot Pie?

The sauce is what makes the chicken pot pie so decadent. It keeps the filling from becoming dried out and it is absolutely packed with flavor.

For the sauce of my homemade chicken pot pie, I use the renderings from the chicken in the skillet and add a little butter, flour, and heavy cream.

Do You Prebake The Bottom Crust Of A Chicken Pot Pie?

Some homemade chicken pot pies call for you to prebake the bottom crust before baking the chicken pot pie. This is often done to prevent it from becoming soggy after adding the filling.

To keep this recipe quick, I chose to make a thicker roux so that it would not be overly watery and not require prebaking the crust.

Do You Put Eggs In Chicken Pot Pie?

If you look below, you will see that this recipe calls for eggs. However, they’re not put INSIDE of the chicken pot pie. I scramble the eggs and brush them over the top of the pie crust before baking to give it that beautiful golden brown color.

Why Does My Chicken Pot Pie Get Watery?

Many times a homemade chicken pot pie will still be watery or contain too much liquid even after the baking time is complete. There are two things that can cause this to happen.

  1. You didn’t add enough flour to your roux and the sauce is having a hard time thickening.
  2. You added too many veggies and they are releasing moisture while your pot pie is cooking.

Both of these are easy to avoid if you follow my ingredient list below.

Ingredients To Grab

  • Refrigerated pie crust.
  • Chicken.
  • Potatoes.
  • Frozen mixed vegetables.
  • Milk.
  • Flour.
  • Butter.
  • Eggs.
  • Salt and pepper.

How To Make Homemade Chicken Pot Pie

Step 1: Fill a large pan with water and bring it to a boil. While the water is warming, peel the potatoes and dice them into small 1/4-inch cubes.

Step 2: Once the water is boiling, place the potatoes in the pot.

Step 3: While the potatoes are cooking, dice the chicken breasts into small pieces. Season them with salt, pepper, and garlic powder.

Step 4: Remove the potatoes from the burner and drain the water. Pour the frozen vegetables on top of the cooked potatoes to begin allowing them to defrost.

Step 5: Place a small amount of oil in a skillet and saute the chicken until it is cooked through.

Step 6: Add butter and allow it to melt in the same skillet as the cooked chicken. Add the flour to the melted butter and chicken mixture and stir until it creates a thick paste. Slowly add milk until a roux is formed. Remove the skillet from the heat.

Step 7: Preheat the oven to 375F.

Step 8: Spray the pie plate with nonstick spray and press one pie crust firmly into it.

Step 9: Add the potatoes and vegetables to the bottom pie crust.

Step 10: Pour the chicken and roux on the potatoes and vegetables.

Step 11: Place the top pie crust on top of the filled pot pie. Scramble an egg and brush it on top of the pie crust.

Step 12: Cover the chicken pot pie with foil and bake for 15 minutes. After 15 minutes, remove the foil and allow it to bake for an additional 30 minutes.

Step 13: Remove the homemade chicken pot pie from the oven and allow it to cool for 5 minutes before serving.

Tips And Tricks

  • Use rotisserie chicken. To make this recipe even more simple, use precooked rotisserie chicken. Simply shred it into bite-sized pieces and create the roux as instructed in the instructions above.
  • Keep it simple. If you’re short on time or don’t have the patience or hand dexterity for an intricate crust, don’t worry. All you have to do is lay on the top crust and cut a few holes in it to allow the steam created from the pie filling to vent.
  • Switch up the vegetables. We prefer the frozen blend of peas and carrots for our pot pie, but you can use any variety of your liking. You can also use canned or fresh veggies in place of the frozen if that’s what you have in your kitchen.
  • Pick your protein. We eat a lot of chicken in our house, so naturally, we chose a chicken pot pie. If chicken isn’t your protein of choice, feel free to swap it with turkey, pork, or even ground beef–Just make sure your protein is cooked thoroughly before adding it to your pot pie for baking.

Ingredients

  • 2 Refrigerated Pie Crusts
  • 2 Chicken Breasts
  • 2 Diced Russet Potatoes
  • 1 Cups Frozen Mixed Vegetables
  • 2/3 Cup Heavy Cream
  • 1/3 Cup All Purpose Flour
  • 2 Tablespoons Butter
  • 1 Egg
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Teaspoon Garlic Powder

Instructions

    Step 13: Remove the homemade chicken pot pie from the oven and allow it to cool for 5 minutes before serving.
