Pepperoni Pizza Bombs | Easy Mini Pizza Bites With Biscuit Dough

Pepperoni Pizza Bombs are a flavorful combination of spicy pepperoni, melty mozzarella cheese, and flaky biscuits topped with a blend of Italian herbs and butter. Dip them in a tangy pizza sauce and you have a quick and easy weeknight meal or after-school snack that is simple enough even the kids can help make them!

What Are Pizza Bombs

While they may sound dangerous, I can assure you there’s nothing scary about these bite-sized pizza treats. They’re called pizza bombs because of the absolute explosion of flavor they give your taste buds when you bite into one.

They are essentially tiny little pizza pockets made out of refrigerated biscuit dough and stuffed with your favorite pizza toppings.

Grab These Ingredients

Refrigerated Biscuits- I used Grands for this recipe, but the smaller store-brand biscuits will work as well.

Mozzarella Cheese Pearls- I have made these with shredded mozzarella cheese as well. It can be trickier to tuck inside of the biscuit dough. For the most simple assembly, reach for the pearls.

Pepperoni Slices- Mild or spicy pepperoni slices can be used depending on your personal preference.

Butter- Works as the “glue” to hold the herbs onto the top of the pizza bites.

Italian Seasoning- Adds another layer of flavor and color to this recipe.

Pizza Sauce- Grab your favorite jar of pizza sauce from the pantry and get to dipping!

How To Make Pizza Bombs

Step 1: Make biscuit balls. Cut the biscuits into two pieces and use your palms to roll them into balls.

Step 2: Flatten the biscuit balls. Press the balls of biscuit dough into thin discs. They should be approximately 1/4″ thick.

Step 3: Add the pepperoni and cheese. Place the pepperoni slices and mozzarella cheese in the center of the biscuit dough.

Step 4: Close up the pizza bombs. Grab the edges of the pizza dough and pinch them together, enclosing the filling inside of the dough. Take extra care to make sure there aren’t any holes in the biscuit dough pouches you’ve created. The cheese will ooze out of the biscuits when they are baking if you leave any room to escape.

Step 5: Place the Pepperoni Pizza Bombs in a baking dish. Coat the baking dish with nonstick spray to avoid sticking.

Step 6: Coat the pizza bites with butter and herbs. Warm the butter in the microwave and mix in the Italian herb mix. Brush over the top of the biscuit dough with a silicone brush.

Step 7: Bake the pizza bombs. Bake them until golden brown. Serve with your favorite pizza sauce and enjoy!

Tips and Tricks

  • I used Grands large refrigerated biscuits and cut them in half. You can buy the smaller, cheaper biscuits (they usually come in a pack of 4) and use a whole biscuit for each pizza bomb.
  • I’m a sucker for butter, so I used it to brush the tops of my stuffed biscuits. However, olive oil can be used in place of butter.
  • Avoid using ingredients with excessive moisture (think pineapple, very soft cheeses, super greasy meat) when possible. This can make the bottoms of your pizza bombs soggy as the biscuits cook.

Variations

Meat Lovers. Why stop with pepperoni? Add in bacon, beef, ham, or even chicken.

Vegetarian. Add cheese, broccoli, cauliflower, and potatoes for a veggie-packed comfort meal.

Mac and Cheese. Stuff the biscuits my Instant Pot Macaroni and Cheese for a cheesy carb overload.

Buffalo Chicken. Not sure what to do with that leftover Instant Pot Buffalo Chicken Dip? Fill the biscuits with a spoonful of my favorite dip for an appetizer with a kick.

Breakfast. Fill the biscuits with scrambled eggs, bacon, and cheese for a complete breakfast all in one bite!

What To Serve With This Pizza Bomb Recipe

If you’re serving these as an appetizer, you may not need to serve anything other than a dipping sauce with them. However, if you’re making these into a meal, you may want to serve a side or two to make it a more rounded meal.

Here are a few things that would pair well with pizza bombs:

  • Pizza Sauce– obviously, pizza sauce is the traditional choice for dipping.
  • Alfredo Sauce– The cream based sauce would be a nice balance for the spiciness of the pepperoni.
  • Mac and Cheese– Nothing screams the perfect “kid meal” like pepperoni pizza and cheesy pasta.
  • Side Salad– Cut some of the richness of these pizza bites with a refreshing salad
  • Soup– Since there is no sauce inside of the pizza pockets, they make a great dipper or garlic bread alternative to many of your favorite soups or Italian dishes.

Pizza Bomb Prep and Storage

I haven’t tried making these to bake the same day more than a few hours in advance. If you like to prep meals in the mornings to pop in the oven after work or school, these work wonderfully for that. Just assemble the pepperoni pizza bombs as instructed (minus brushing with butter and herbs) place them on a baking pan, and cover them with plastic wrap. When you’re ready to bake them, simply brush the tops of the biscuits with butter and oregano and pop them in the oven for the time and temperature instructed in the directions below.

If you want to make these for later in the week (or month) you’ll be happy to learn that they’re freezable!

To freeze these, prep them as instructed (again, without brushing the tops with butter or oil and herbs) and cover with plastic wrap. Pop them in the freezer for 2 hours or until frozen solid. Remove them from the sheet pan and place them inside of a freezer-safe container or plastic bag. They’ll stay good in the freezer for up to two weeks. To reheat, place them back on a baking sheet, brush with butter and herbs, and bake at 375F for 20 minutes or until golden brown.
