What one person considers healthy can be a completely different story for the next person. While this may not be the most calorie-conscious or low-fat meal option, it is still a high-protein, hearty breakfast.
If you want to make this a healthier option, consider using egg whites only, turkey sausage, and minimal butter or oil to fry the eggs and top your toasted English muffins.
Prepare the sausage patties and cook. Create sausage patties approximately 1/2″ thick and the same diameter as the English muffin. It is better to err on the larger side than the smaller one because the sausage will shrink while cooking.
Fry the eggs. Place a small amount of butter or nonstick spray in a skillet. Use nonstick spray and spray the egg ring or mason jar lid well. Place the egg rings in the skillet and crack an egg inside of the rings. Pour 2 tbsp of water into the skillet OUTSIDE of the egg ring. Place the lid on the skillet and steam the eggs for 2 minutes, or until the egg whites are set. You may need to cook in batches, depending on how many egg rings you have.
Toast the English muffins. While sausage and eggs are cooking, place the English muffins in the toaster and toast until golden brown. Spread butter on the muffins while they are warm straight out of the toaster.
Assemble the sandwich. Place the cheese on top of the buttered and toasted English muffin. Top the cheese with a cooked piece of sausage. Place a cooked round egg on top of the sausage patty. Season with salt, pepper and parsley.
Serve and enjoy! Serve your Sausage and Egg Muffin Sandwich with your favorite breakfast sides and enjoy!
