These Ultimate Breakfast Burritos are a filling, tasty, and family-friendly breakfast, brunch, or dinner. The perfect combination of crispy flour tortilla loaded with eggs, meat, tater tots, and melty cheese will have you making them again and again.

WHAT ARE GOOD BREAKFAST BURRITOS?

In my opinion, all breakfast burritos are good breakfast burritos.

But what makes the BEST breakfast burrito? Something that checks all of the boxes.

Salty meat.

Creamy eggs.

Melty Cheese.

Crispy potatoes.

Perfectly toasted tortilla.

Dip all of that in your favorite salsa and you have the Ultimate Breakfast Burrito.

CAN YOU EAT A BURRITO FOR BREAKFAST?

I’ve never been one to eat certain kinds of foods for certain meals. For as long as I can remember I’ve been making my family burritos, pizza, steak, and cashew chicken for breakfast. And who doesn’t love a great breakfast recipe for dinner? My boys ask for breakfast for dinner at least once a month.

So if you want to eat a burrito for breakfast, you do you. I can assure you that you’re not alone.

WHAT IS A BREAKFAST BURRITO MADE OF?

There are thousands of different breakfast burrito recipes out there (I would know…I’ve tried most of them). You’ll find a number of different ingredient combinations ranging from super simple to incredibly complicated and unique.

For my Ultimate Breakfast Burritos, I decided to make it a comfort cook from my childhood. I used classic breakfast ingredients inspired by the breakfast burritos I used to make my dad in the mornings before he took me to school.

Here’s what you’ll need:

Bacon– Everyone’s favorite breakfast meat

Sausage– I love a maple-flavored sausage to add a touch of sweetness to the burritos

Eggs– Scrambled to add a creamy texture

Tater Tots– For a crispy crunch in every bite

Velveeta– The perfect rich and melty cheese

Flour Tortillas– These crisp up beautifully and are easy to fold

Step 1: Cook the meats. Chop up your bacon and add the ground sausage. Cook them until they reach an internal temperature of 160F.

Step 2: Bring your oil to 350F and deep fry until crispy and golden brown.

Step 3: Remove excess oil. Place the breakfast meats and tater tots on a paper towel or dish towel to absorb any excess oil.

Step 4: Scramble the eggs. Make sure you whisk them well so your eggs are light and fluffy.

Step 5: Cook your eggs. Pour the scrambled eggs into a hot skillet.

Step 6: Swirl the eggs. Lift the skillet off of the burner and gently swirl the eggs around the pan so they evenly coat the bottom.

Step 7: Add your tortilla. Before the eggs are completely cooked, place the flour tortilla directly on top of the scrambled eggs in your skillet.

Step 8: Flip it. Once the eggs are set and have cooked to your flour tortilla, carefully flip them in your skillet so that the flour tortilla is touching the pan.

Step 9: Fill it. Remove the tortilla and eggs from the skillet. Then add the bacon, sausage, tater tots, and melted Velveeta to the egg side of your tortilla.

HOW TO ROLL AN ULTIMATE BREAKFAST BURRITO

Step 1: Tuck in the bottom end of the tortilla. You’ll want to bring it up about 1/4 of the length of the burrito.

Step 2: While holding the bottom end that you have tucked in, bring in one long side of the tortilla 3/4 of the way across the burrito.

Step 3: Holding the part of the tortilla where the two different folds connect, tightly roll the burrito over until it makes a traditional burrito shape.

DELICIOUS VARIATIONS

While I have dubbed these the ULTIMATE Breakfast Burritos, I understand that not everyone has the same palate as I do.

WHAT CAN I SERVE WITH BREAKFAST BURRITOS

This breakfast burrito recipe has it all. Meat, cheese, eggs, and a crispy tortilla. What else could anyone possibly want?

Of course, all of these rich flavors can always use something to help cut some of the fat on your palate. Here are a few things that would be delicious as a side or served as a sauce or topping:

  • Yogurt
  • Fruit Salad
  • Sour Cream
  • Avocado
  • Salsa

MAKE AHEAD AND STORAGE

Who says you have to wake up super early to have a tasty and filling breakfast? Here are a few tips and tricks to help you prep store these ultimate breakfast burritos for meal prep:

TIPS FOR MEAL PREP

With a little bit of prep work, you can make these burritos fresh in a matter of minutes for an easy on-the-go breakfast — even through the week!

Use some of these tips to make them even faster:

  • Cook your bacon and sausage ahead of time. You can cook the bacon and sausage and keep them in a air tight container for up to 5 days to toss inside your breakfast burrito.
  • Cook your tater tots ahead of time. Once they are refrigerated, they won’t be quite as crispy. So to reheat them, pop them in your air fryer for a few minutes while you cook your eggs and toast your tortilla.
  • Use shredded cheese. Sure, velveeta is a next level flavor that can’t be duplicated. But if you don’t have time to melt your cheese, sprinkle some sharp cheddar on top of your eggs while the tortilla is toasting in the skillet for a quick melty cheese flavor.

HOW TO FREEZE ULTIMATE BREAKFAST BURRITOS

You can easily make enough of these for every day of the week all at once to save yourself even more time.

Here’s how you do it:

  1. Cook the breakfast burritos as directed, but SKIP the step of crisping the tortilla in the skillet after the eggs are cooked.
  2. Fold your tortilla according to the instructions above.
  3. Roll the finished burrito in parchment paper and tape shut.
  4. Roll the parchment paper covered burrito in aluminum foil.

These breakfast burritos should last 3-4 months in the freezer without losing any of their delicious flavors.

TO REHEAT THEM

To reheat the breakfast burritos, allow them to defrost in the refrigerator overnight. I like to pull one out of the freezer the night before while I’m packing lunches.

When they’re defrosted, heat up a skillet to low heat and add a tiny bit of oil (about a teaspoon). Place your burrito in the skillet and place a glass lid on top. This will help keep the heat inside of the skillet so the contents of the burrito heat all of the way through.

After the meat and eggs are warm, remove the lid from the skillet, adjust the burner to high, and crisp all sides of the burrito.
