Patriotic Poke Cake is a fun and flavorful dessert to make for any summertime celebration! Light, fluffy, and delightfully decorated, this red, white, and blue poke cake is just as fun to make as it is to eat.
First, pour the cake mix into a prepared 9×13 baking dish. Place the cake mix into an oven preheated to 350F for 34-38 minutes or until a toothpick can be inserted into the center and comes out clean.
Then, remove the cake from the oven and allow it to cool for 30-45 minutes. Use the handle of a wooden spoon to gently poke holes in the top of the cake approximately 1/2″ apart. They don’t have to be perfect. You won’t be able to tell after it is decorated.
Prepare the two varieties of jello. Bring 1 cup of water to boil in two different saucepans on your stovetop. Thoroughly whisk the cherry jello mix into one pot of boiling water and the mixed berry jello into the other boiling pot of water. Remove them from heat. Whisk 1 cup of cold water into each of the saucepans of jello mixture.
Carefully spoon the liquid jello into the holes you created in the poke cake. Alternate the red and the blue jello so that you get a variety of patriotic colors in each bite. Cover and place the unfrosted jello poke cake in the refrigerator for 2-3 hours, or until the jello is set.
Finally, use defrosted Cool Whip or other whipped topping to frost the top of our chilled Patriotic Poke Cake. Decorate the top of the frosted jello poke cake with patriotic red, white, and blue sprinkles, cut, and enjoy!
